Our strategic focus is on the outsourced contract foodservice market, one in which we have an enviable track record as the global market leader, together with developing a range of complementary support services in which we have an existing competency and which, driven by customer demand, we want to develop further.
Our approach to the market is based on developing those sectors and countries that have real prospects for growth, as well as providing the global capability necessary to support our growing international client base.
Foodservice
The total market is worth around £150 billion, with only around 50% currently outsourced, and is growing at about 5% a year. The market is developing at a different pace in different countries and sectors.
Our global coverage and sectorised approach positions us to respond effectively to market trends and capitalise on the many exciting opportunities that exist.
We work in partnership with our clients, usually on their premises and using their facilities to provide foodservice solutions that meet the specific needs of their environment and the end consumer, whether they are a corporate head office, a local school or college, a hospital, sporting venue or an offshore oil rig.
Whilst we may be feeding people in the workplace, their demands for quality, choice and value are equally as discerning as you would find on the high street. Our consumer focus is driving the development and innovation in our food offers, brands and service in order to attract consumers to our restaurants and food outlets day in day out.
Contracts with our clients are mainly based around one of the following four models.
Management fee. All of the operating costs are paid by us and recharged to the client along with an agreed fee. This type of arrangement is most often used where the client is subsidising the food offer.
Fixed price. The client pays an agreed price for a specified range of services. This may be varied, for example, if the number of consumers changes considerably.
Profit & loss. We have control over the offer to the consumer and set the price. This type of arrangement usually occurs where there is little or no client subsidy.
Concessions. We pay an agreed percentage of revenue for the right to trade at the clients’ premises. This type of arrangement is widely used in the leisure sector.
